The term "flat earther" is perfect for describing non-religious people who still believe in insane unprovable hypotheseses. I.e. The Irishman doesn't believe in God but believes that plants and rocks have souls. A guy I work with believes that the Sun goes around the Earth (I'm dead serious). I would call both of them flat earthers.

What about someone who believes in ghosts or spirits outside of any religion? Like a haunting?

I think the term flat earther could apply there as well. Same with people who believe in UFOs or Yeti.
